I made the awesomest dinner tonight! The idea tonight was to use up some kale I had in the fridge that was starting to get a bit wilty. Kale is the most nutrient-dense food on the face of the earth btw.
I remembered a recipe I read on a blog that had kale in some kind of yellow lentil dish. I don’t have yellow ones, but I have red. Needed some kind of grain to go with, and I have some really good short-grain brown rice. So that was my base.
1 cup rice, 2 cups water, bring to boil, simmer 20 minutes. Add 1 cup each red lentils and water.
When that was almost done (about 20 more minutes), I looked through my fridge and cupboard for pretty much anything that would go with it, and here’s what else went into the pot:
the chopped up kale of course
1 T or so of nutritional yeast
1 T veggie bouillon
some plain soymilk
a can of diced tomatoes, undrained
a splash of soy sauce
5-6 drops of liquid smoke
a cube of pesto (I made a big batch last summer and froze it in ice cube trays)
a good sprinkling of curry powder
some frozen peas
I think that’s all. Best stew I’ve had in a long time. And there’s plenty left over!
Best of all, this uses minimal dishes. One pot, a bowl, a spoon, a can opener…. plus a cutting board and knife if you’ve really pulled out all the stops.
