I made some pasta yesterday that, unintentionally, came out tasting exactly like the Mango Forte at The Foundation.
- small diced onion
- some minced garlic
- can of coconut milk
- can of pineapple tidbits
- some broccoli florets
- chopped up sweet potato
- some rotini or other small pasta
- 1T curry powder
- some veg broth as needed
Saute the onions and garlic for a bit. Add the sweet potatoes, coconut milk, curry, and pineapple juice. Cover & simmer until the sweet potatoes are mostly done, about 15 minutes.
Add everything else in, using just enough broth to keep things moist enough to cook the pasta. It shouldn’t be soupy since you won’t be draining the pasta obviously. Cover & cook on med-low till it’s all done!
If you want to be super copycat-like, omit the sweet potato bit and put some mango in with everything else, add some zucchini near the end, and leave the pineapple out and just use the juice. Then serve with some shredded coconut.
